6 cups shredded cabbage (a mixture of green and red)
1 bunch organic cilantro, chopped
1 cup organic red or orange peppers, diced
½ cup red onion, diced
2 cloves garlic, minced
1 can organic black beans, drained and rinsed
2 T. Foods Alive Nutritional Yeast
½ cup lime juice
½ tsp. ground cumin
½ tsp. chili powder
½ tsp. onion granules
Fresh black pepper
Real Salt or Celtic Salt to taste
Place all of the vegetables, the beans and nutritional yeast in a large bowl. Toss them. Mix the lime juice and spices. Mix well to coat and refrigerate until serving.
This salad is good to top a baked yam, sweet potato, russet or Yukon Gold.
