1 large onion, sliced
6 large cloves garlic, minced
½ cup raw cashew pieces *nut free option below
3 cups pure water
2 cups Great Northern Beans
¼ cup fresh lemon juice (about one lemon)
½ cup nutritional yeast
¼ tsp. nutmeg
½ tsp. Real Salt
½ tsp. Garlic Salt (made from garlic granules and Real Salt)
12 large basil leaves, cut in strips
1 cup fresh parsley, chopped
1 bunch green onions- 9 (green part only)
2 heaping cups broccoli flowerets
½ large red bell pepper, cut in ½ inch slices or chunks
1 small zucchini, julienned
1 1 cup crimini mushrooms, chopped
1 cup organic tomatoes, chopped
More fresh basil, chopped
fresh ground black pepper to taste
Any desired vegetables or greens may be added
Heat large ceramic non-stick skillet over medium-high heat. Once a drop of water sizzles on the skillet, dry sauté the onion. Do not stir, just allow it to cook until it begins to brown around the edges 2-4 minutes. Add a tablespoon of water. Stir. Add the vegetables in the vegetable mixture down to the tomatoes. (reserve tomatoes, second amount of basil and black pepper) along with 3 cloves of the garlic minced on top. Put just a small amount of water if needed so it does not scorch. Cover and reduce heat to medium. Set timer for 5 minutes. Check to be sure it has enough liquid during this time. Typically, the zucchini releases water, so be sure not to add water unless you must.
While this is cooking place the cashews, water, remaining garlic, drained beans, lemon juice, nutritional yeast, nutmeg, and salts in the blender and blend until smooth. Once the vegetables have cooked 5 minutes, pour the sauce from the blender over them along with the basil strips, parsley and green onions. Mix well and heat the sauce mixture, stirring occasionally. Add black pepper Once it bubbles and thickens, it is ready to serve. Serve over whole grain pasta, bean pasta, spiralized zucchini or a mixture of these with remaining chopped basil and tomatoes as garnish.
*NO NUT OPTION: Instead of placing the cashew pieces and 3 cups of water into blender, begin with 3 cups unsweetened soy milk. Continue with recipe as written above adding the drained beans and following.
