Crust
¼ cup raw buckwheat groats (hulled), whole
½ cup buckwheat flour made by putting whole groats in blender
¼ cup ground flax (volume once ground)
2 T. Swerve Brown and 1 doonk Omica Stevia (or use more of either)
¼ tsp. baking soda
¼ tsp. Real or Celtic salt
½ tsp. pure vanilla
¼ cup organic, unsweetened applesauce
2 dates, pitted

Place all of the above in a food processor and process/pulse until it holds together. Press the crumb mixture into a 9-inch springform pan or divide between 12 regular sized parchment lined or silicone cupcake holders for individual tortes. Refrigerate crust while preparing filling.

Filling
7.75-8 oz. organic firm tofu, patted dry
12 oz organic soft tofu, blotted dry
1 pitted date
¼ tsp. Omica Stevia powder
1/3 cup unsweetened organic cocoa powder
2 tsp. pure vanilla
¼ tsp. Real or Celtic salt

Put all of the above into a high-speed blender and blend until smooth

Bring to a boil
1 cup pure water
2 T. Agar Agar Flakes (I have not tried with the powder, but 2 tsp. of agar powder subs for 2 T. flakes)
Bring to a boil in a saucepan, stirring with a whisk. Reduce heat and simmer for 5 minutes, stirring often.

Do not cool this agar mixture, just pour it into the blender with the chocolate tofu mixture and blend for 2 minutes until smooth and silky. Pour into prepared crust or individual crusts. If using the individual crusts, you may have some leftover which you can put in a custard cup and enjoy as pudding after chilling.
Refrigerate until set, several hours or overnight. Individual tortes may be frozen, but best fresh

At serving time, drizzle with NuNaturals NuStevia Cocoa Syrup if desired (put a small amount in a baggie or pastry bag and snip a corner off to make a uniform drizzle). May also sprinkle pomegranate arils on top, or fruit filling using recipe below. Cherry, raspberry or strawberry are pretty for the holidays.

Fruit Topping
2 cups fresh or frozen fruit
½ cup pure water
Omica stevia to taste
Bring to a boil and thicken with a mixture of 1 ½ T. of tapioca flour and 1 ½ T. water. Add ONLY what you need to thicken to desired texture. Do not pour it all in at once.
