32 oz. glass jar organic Sauerkraut (Eden Organics makes one)
2 cups chopped onion (some red is pretty)
2 cups chopped organic celery
1 organic red bell pepper
1 organic yellow or orange bell pepper

Dressing:
2/3 cup raw apple cider vinegar (like Bragg’s)
¼ tsp. Omica Organics Stevia Extract Powder
½ tsp. paprika
Fresh cracked pepper to taste

Rinse the sauerkraut in a strainer and let it drain. Place it in a large bowl with the chopped onion, celery and peppers. Mix all of the dressing ingredients. Pour over the vegetables in the bowl and mix well. Chill until ready to serve. Mix well again at serving time. This makes a large batch and will stay good in the refrigerator for a few weeks. I always return some of it to the sauerkraut jar for long-term and put the rest in a covered bowl.
This is an ideal way to have a spoon of fermented food daily. It counts toward your 2 lbs. of non-starchy vegetables AND is a cruciferous vegetable.
