1 large onion
1 lb green beans (fresh or frozen)
8 oz. unpeeled organic potatoes scrubbed and cut into ½ inch cubes
1 clove garlic, minced
1 tsp. Wright’s Liquid Smoke
1/2 -1 cup water
½ tsp. Celtic or Real Salt (may be omitted)
Black pepper to taste
Dry or steam sauté onion on hot skillet. Once it is beginning to brown, add a small amount of the water, 1 tsp liquid smoke, the potato cubes and green beans and minced garlic. Use enough water so that the mixture can steam sauté without scorching. Cover, reduce heat and simmer until potatoes and beans are tender (20-30 minutes). Check potatoes periodically and add enough water to keep them from scorching.
These are not tender crisp green beans; this recipe mimics the beans cooked with bacon and onions my mom always made.
OPTIONAL: Add mushrooms
